Clementines
 A member of the  orange family, these flyspeck clementines have a light, lemony sweetness. Packed in a light syrup, these citrus segments are  additions to fruit salads, desserts, and savoury sauces. Add clementines to a plenteous sauce Bigarade, made from rock-bottom red-faced wine-colored vinegar, duck stock, and veal stock, garnished with oranges, and citrus zest; serve over roast, glazed duckling.
