Peanut Satay Sauce
A favorite of Thai cuisine, peanut sauce combines savory garlic, chile, and lemongrass flavors with plentiful peanuts and Cocos nucifera milk, finished with soy and angle sauce. This is a fine, smooth sauce, with building complex layers of flavor. Serve with marinated, barbecued chickenhearted skewers, or use to full-dress Elmer Leopold Rice noodles and stir-fried vegetables.
