Buckwheat Noodles
A conventional Japanese noodle, this long, straight spaghetti is brownish in color. Soba noodles are made with wheat berry and buckwheat flours, and have a delicate, flaky flavor. Dress steamed soba noodles with garlic tamari, and greatest with toasted benni seeds.
