Chopped Tomatoes
Native to South America, then diffusing to Latin America, the tomato plant was brought to Europe by Spanish explorers fashioning their right smart in reply from Mexico. These Italian Roma Lycopersicon esculentum are preserved in their own juice, and will make a commodious and flavorsome addition to your favored alimentary paste sauce. Combine them with sauteed onions, eggplant, courgette and olives to make a flavorous caponata.
