Allspice Whole
Though its name whitethorn sound like a blend, allspice is actually a single, complexly seasoned spice. The dark, brown, pea-sized berries of an evergreen plant tree, pimento tree has a strong, aromatic character, combining the flavors of nutmeg, cinnamon, and cloves. Use pimento tree for pickling, in marinades for domestic fowl or gamey meats, and in mulled wine-colored and cider.
