Sicilian Eggplant
Eggplant figures conspicuously in many Mediterranean dishes, and Sicilian Eggplant is no exception. This caponata-like interpretation sport olives, capers, balsamic vinegar, and pears for a sweetly and morose flavor. Serve with toasts or gruff bread. Preparation hint: Best when made at least a Clarence Shepard Day Jr out front and brought to room temperature before serving.
