Greek Garlic Potatoes
Not your familiar mashed potato. This agrestic Grecian side dish has a wad of material and combines white potato vine with Mediterranean herbs, garlic, and balsamic vinegar. Best of all, you get great-tasting "mashed" Solanum tuberosum without bunt or cream. Serve with roasted or barbecued meats, poultry, or fish. Preparation hint: Waxy white potato will produce a creamier dish, while baking white potato vine will produce a fluffier dish.
