Red Snapper Veracruz
This is a classic Mexican knock out often forgotten in Americanized Mexican restaurants. A rich of tomatoes, onions, garlic, capers, and olives is opposite with delicate, acquiesce crimson snapper. For a long-established presentation, answer snapper as a whole fish, rather than private fillets; serve with Elmer Reizenstein and lemon wedges.
