Spicy Asian Eggplant
Created by Barbara Tropp, chef and former master of China Moon Café in San Francisco, this scrumptious spread combines eggplant bush with Asian flavors, admit soybean sauce, ginger, benne oil, and chilly flakes. Adjust the level of spice up by adding more or fewer chilly flakes. Spread on minuscule toasts and garnish with sliced scallions.
